Caprese Pesto Pasta Skillet
The perfect pasta for a busy weeknight.

Ingredients
- 1 box or bag (1 lb) pasta of choice
- A few drizzles of olive oil as needed
- Approx. 1 cup of pre-made pesto (more or less depending on taste preference)
- 3 to 4 links of Gilbert’s Caprese Chicken Sausage (coined as shown)
- A few handfuls of spinach or other greens
- Optional: seasonings as desired and fresh basil leaves
Instructions
- Cook pasta per package instructions. Once done drain, drizzle with a bit of olive oil to prevent sticking, and set aside.
- Next, in a large skillet, over medium-high heat saute coined sausages until browned and warmed through. Then remove from the skillet and set aside.
- In the same skillet (now empty and temperature turned to medium-low) add in your cooked pasta and pesto, stirring to coat noodles.
- Next, to the skillet add your spinach/greens and mix into pasta allowing the leaves to wilt, etc. as shown.
- Return cooked sausage to the skillet, carefully mixing to incorporate with the rest of the dish.
- Season if desired, and garnish with fresh basil leaves as desired.
- Serve and enjoy!
