Caprese Pasta

Ingredients
- 4 oz fusilli pasta
- 1 tsp chicken bouillon flavoring
- 2 Cups reserved pasta water
- 2 Gilbert's Caprese Chicken Sausages
- 1 Pint roasted grape tomatoes
- 6 Garlic cloves, roasted
- Avocado oil spray to lightly coat tomatoes & garlic
- 1 tsp Italian seasoning
- 1 Cup frozen spinach use 2 cups if fresh
- 1/4 cup pesto
- 1 oz. Fresh part skim mozzarella
- Fresh lemon zest & juice to garnish
- Fresh basil to garnish
- Salt & pepper to taste
Instructions
- First roast your tomatoes and garlic. I had already had them done so I didn't need to do this step. Set oven to 400. Place tomatoes and garlic cloves on a parchment lined sheet pan. Spray lightly with avocado oil and season with salt, pepper and Italian seasoning
- Now it's time to cook the pasta according to the package. While pasta is cooking reserve 2 cups of the pasta water right before you are about to strain
- Set pasta aside
- Slice up the chicken sausages and place into a pan lightly coated with cooking spray. Brown lightly
- Add the spinach, tomatoes, garlic and pasta
- Slowly add the pasta water to thicken up a sauce. A nice sauce will be created from the pasta water and the juices from the roasted tomatoes.
- Season to taste with salt and pepper
- Garnish with the fresh mozzarella and fresh basil
