Simple Sausage and Pepper Frittata
Just like the name says.

Ingredients
- 2 eggs, lightly beaten
- 1/2 c thinly sliced bell pepper, any color
- 1 Gilbert’s Green Pepper & Onion chicken breakfast sausage, thinly sliced
- Salt and pepper, to taste
Instructions
- Coat a small skillet with olive oil cooking spray and heat over medium heat. Add peppers and sauté about 3 minutes, until slightly softened. Add sliced sausage and sauté until peppers and sausage are beginning to brown, about 2- 3 minutes longer. Transfer peppers and sausage to a separate plate and set aside.
- Allow skillet to cool slightly and re-spray with extra cooking spray. Heat over low heat and add beaten eggs. Season with salt and pepper. Allow eggs to gently cook, undisturbed, for a couple of minutes. Once the edges begin to set add the sausage and peppers to the top of the frittata. Cover skillet and continue to cook over low heat, about 2 minutes, until the top of the eggs has set. Gently transfer to a plate and enjoy!
