Chicken Sausage Burrito Bowl

The chicken burrito bowl at your favorite Mexican quick-service restaurant has a lot of empty calories and fat from added oil and high-fat sour cream and cheese. Save a few bucks and a lot of calories by making ahead with Gilbert’s mildly spicy Andouille Chicken Sausage.

Makes 4 servings.

  1. Chop or shred the lettuce
  2. Drain and rinse black beans
  3. Drain and rise corn kernels
  4. Whisk together greek yogurt and lime juice
  5. Cook or reheat rice, sprinkle with lime juice and fluff with chopped cilantro.
  6. Cook and slice sausages.
  7. Divide the rice evenly into 4 bowls.
  8. Arrange chicken sausages, black beans, and corn over the rice according to your preference.
  9. Top with lettuce, salsa and a dollop of lime-yogurt

Making Ahead?

For fresher flavor, heat and add your sausage (Gilbert’s individually-wrapped links steam in package in the microwave) and beans & rice while assembling your bowl
