- Spray a large skillet with cooking spray and heat over medium heat. Add sausages and cook until brown and slightly crispy, about 4-5 minutes. Remove from skillet and set aside.
- Add 1 tbsp olive oil to the same skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds.
- Add sliced zucchini and squash, season with Italian seasoning and salt and pepper. Cook until squash is tender but still has a little bite to it, about 5-7 minutes.
- Turn off heat and stir in tomatoes. Tomatoes will warm through and become juicy. Return sausage to skillet and top with fresh basil, if desired. Enjoy!
