Summer Zucchini & Sausage Skillet

Put your garden to work with this bright summer skillet. Makes 4 servings: 4 sp/serving.

  1. Spray a large skillet with cooking spray and heat over medium heat. Add sausages and cook until brown and slightly crispy, about 4-5 minutes. Remove from skillet and set aside.
  2. Add 1 tbsp olive oil to the same skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds.
  3. Add sliced zucchini and squash, season with Italian seasoning and salt and pepper. Cook until squash is tender but still has a little bite to it, about 5-7 minutes.
  4. Turn off heat and stir in tomatoes. Tomatoes will warm through and become juicy. Return sausage to skillet and top with fresh basil, if desired. Enjoy!
