6-Ingredient Sausage Egg Cups
Start your day off right with these quick, savory egg cups featuring our Caprese Chicken Sausage

Ingredients
- 1 bell pepper (diced, we used red)
- 3- 4 links of Gilbert's Caprese Chicken Sausages
- 1 dozen eggs
- 1/4 cup milk
- a handful of baby spinach leaves (rough chopped)
- 1/2 cup shredded cheddar cheese (divided)
- Olive oil
- Non-stick cooking spray
- Salt and pepper to taste
Instructions
- Pre-heat oven to 350 degrees.
- Remove sausage links from wrappers. Slice each link in half lengthwise. Then cut again, so that you have 4 strips. Chop sausage strip pieces into bite-sized pieces and set aside.
- In a skillet over medium-high heat, heat up a bit of olive oil. Add sausage pieces and diced bell pepper to skillet. Sauté for a couple of min. until pepper is softened and sausage pieces slightly browned. Then remove from heat and set aside.
- In a mixing bowl whisk together eggs and milk. Then add in: bell pepper, sausage, baby spinach and above half of the cheese. Season with salt and pepper as desired.
- Spray muffin pan wells with cooking spray. Then carefully add a bit of the egg mixture to each well (filling approximately 2/3- 3/4 way full). Sprinkle each well with a bit more of the cheese overtop.
- Bake for approximately 25 min. Then remove snd allow to slightly cool.
