Caprese Sausage with Pesto Roasted Vegetables
Pair your Caprese with a sheet pan by hitting the vegetables with some pesto.

Ingredients
- 4 Gilbert’s Caprese Chicken Sausages, sliced
- 1 bell pepper, any color, diced
- 1 small zucchini, cut in half and then sliced into ½ inch thick pieces
- ½ small red onion, diced
- 2 small red potatoes, diced
- 2 cup broccoli florets, cut into small pieces
- ¼ cup pesto
Instructions
- Preheat oven to 400F. Place all vegetables on a large baking tray and toss with the ¼ cup pesto until well coated. Bake for 15 minutes.
- Remove tray from oven and flip vegetables. Add the sliced sausage and cook for another 10-15 minutes or until vegetables are cooked through and roasted to your desired doneness. Can be served as is or with your favorite grain. Enjoy!
