Creamy Caprese Lentil Pasta
An easy 30 minute meal made gluten-free with red lentil pasta.

Ingredients
- 4 links Gilbert’s Caprese Chicken Sausages
- 1 bag (12 ounces) red lentil pasta
- 1 carton (32 oz) vegetable broth
- 1 can (14.5 oz) petite diced tomatoes
- 1 small yellow onion (chopped)
- 5 garlic cloves (finely chopped)
- 2 tbsp extra virgin olive oil
- 2 tsp dried oregano
- 8-12 basil leaves (roughly chopped) plus a few more for garnish
- Salt and pepper to taste
Instructions
- In a large skillet or pot combine all ingredients except your basil leaves, salt and pepper. Stir together.
- Cover and bring to boil. The immediately reduce heat and simmer for approximately 20 minutes (covered), stirring every few minutes.
- Add salt, pepper and your chopped basil leaves. Stir to combine for one minute.
- Remove from heat, adding additional leaves fir garnish, as desired. Divide between 4- 6 dishes and enjoy!
