Fig & Feta Breakfast Flatbread
It's not pizza when you eat it for breakfast.

Ingredients
- 1 Gilbert’s Fig & Feta Chicken Sausage, sliced
- 1 5-6 inch flatbread
- spreadable cheese (such as Boursin, Allouette, or Laughing Cow)
- 1 large handful of spinach (or kale) sauteed with a little cooking spray, salt, and pepper
- 1 egg
- feta cheese
- balsamic glaze, if desired
Instructions
- Preheat oven to 450°F. Spray a baking pan and lay out flatbread.
- Top the flatbread with some spreadable cheese and then add the sauteed spinach. Add the sliced sausage and carefully crack an egg into the center of the bread.
- Bake for about 10 minutes, until egg whites are set and yolk is cooked to your desired doneness.
- Finish the flatbread with a sprinkle of feta cheese and a drizzle of balsamic glaze. Enjoy!
