Rarebit Cheese Sauce

Rarebit Cheese Sauce

A sharp Cheddar cheese sauce flavored with onions, Worcestershire, and Hinterland’s Bourbon Barrel Scotch Ale.

Ingredients
  • 1 tablespoon Unsalted butter
  • 1 tablespoon White onion, grated on fine holes of a box grater
  • 1 tablespoon All-purpose flour
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon Worchestershire sauce
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup Hinterland Bourbon Barrel Scotch Ale
  • 1/2 cup Heavy cream
  • 3/4 cup Shredded cheddar cheese
  • Hot sauce, to taste
Instructions
  • Melt butter in a small saucepan over medium-low heat. Add grated onion and cook for 1 minute.
  • Add flour and cook, stirring continuously, for 2 minutes. Do not let flour brown.
  • Stir in Dijon mustard, Worchestershire sauce, kosher salt, and black pepper.
  • Whisk in Hinterland Bourbon Barrel Scotch Ale and heavy cream. Bring to a boil, stirring occasionally and scraping the bottom of the pan to prevent scorching.
  • When mixture boils, reduce heat and simmer for 5 minutes, stirring often.
  • Remove pan from heat and whisk in cheese and hot sauce, if desired.
  • To build sandwich, lightly butter a white hot dog bun. Split a Chipotle, Mozzarella & Lime sausage lengthwise down the center, taking care not to cut all the way through. Lightly brown sausage, cut side down, on a griddle or in a nonstick pan over medium-high heat. Place sausage, cut side up, on buttered bun. Pour 1/3 to ½ cup cheese sauce over sausage and bun and place under preheated broiler until golden brown and bubbly.
