Caprese & Kraut Pita Pockets
Not what you expected, but the Caprese turns out to be great in a pita. Just the right combination of flavors, easy to make and good for you.
Ingredients
- 2 Gilbert’s Caprese Chicken Sausages, sliced on the bias into 1/2-inch pieces
- 2 halves Pita bread, warmed in the oven or toaster
- Hummus, to taste
- 1 cup Flat leaf parsley, minced
- 1/4 cup Onion, minced
- 1 tbsp Lemon juice
- Tomato wedges, to taste
- Cleveland Kraut Roasted Garlic kraut, to taste, ~1 tsp per pita
- Plain yogurt, to drizzle
Instructions
We make a lot of Italian-inspired recipes. Who knew the Caprese would be PERFECT in a pita? The flavors of gyros and falafel sandwiches with a taste all their own, you are going to love these pitas. The addition of Cleveland Kraut Roasted Garlic kraut allowed us to keep the taboulleh quick & easy and adds a lot of depth. These would be great with fresh cucumber and lettuce if you are so inclined.
- Sautée sausages in a skillet
- To make taboulleh, mix parsley, onion, lemon juice and a pinch of sat. Let sit in refrigerator for 10 minutes
- Spread hummus on inside of pita, add taboulleh, sausages, tomatoes and kraut, drizzle with yogurt and a squeeze of lemon
