Mini Caprese Bites

Don’t make your guests fight over a Caprese salad. These festive appetizers bring everything together in sweet little handheld bites that are perfect for a holiday party or a Friday night at home.

Ingredients
  • Gilbert’s Caprese Chicken Sausages
  • Fresh basil leaves
  • Little mozzarella pearls (or small balls, cut in half- we lightly drizzled ours with olive oil and tossed with Italian seasonings)
  • Grape tomatoes (cut in half)
  • 1/2 cup balsamic vinegar
  • 1/8 cup honey (for reduction; see below)
  • Toothpicks
Instructions
  1. Coin sausage links and cook stovetop until warmed and slightly browned. Remove from heat and set aside.
  2. Make balsamic vinaigrette reduction by combining balsamic vinegar and honey in a small saucepan and placing over high heat. Bring to a boil, then reduce heat to low and simmer until mixture has reduced to desired consistency. Set the reduction aside to cool.
  3. Place sausage coin, basil leaf, mozzarella pearl, and tomato half as desired/shown on toothpick.
  4. Serve balsamic reduction alongside Mini Caprese Bites, or drizzle reduction overtop before serving.
