Mini Caprese Bites
Don’t make your guests fight over a Caprese salad. These festive appetizers bring everything together in sweet little handheld bites that are perfect for a holiday party or a Friday night at home.

Ingredients
- Gilbert’s Caprese Chicken Sausages
- Fresh basil leaves
- Little mozzarella pearls (or small balls, cut in half- we lightly drizzled ours with olive oil and tossed with Italian seasonings)
- Grape tomatoes (cut in half)
- 1/2 cup balsamic vinegar
- 1/8 cup honey (for reduction; see below)
- Toothpicks
Instructions
- Coin sausage links and cook stovetop until warmed and slightly browned. Remove from heat and set aside.
- Make balsamic vinaigrette reduction by combining balsamic vinegar and honey in a small saucepan and placing over high heat. Bring to a boil, then reduce heat to low and simmer until mixture has reduced to desired consistency. Set the reduction aside to cool.
- Place sausage coin, basil leaf, mozzarella pearl, and tomato half as desired/shown on toothpick.
- Serve balsamic reduction alongside Mini Caprese Bites, or drizzle reduction overtop before serving.
