Cajun Chicken Sausage Kebabs

One of our favorite ways to enjoy Gilbert's Andouille Chicken Sausage. Easy, cheap and fun for the whole family. Serves 4.

Ingredients
  • 4 Gilbert’s Andouille Chicken Sausages, cut into large pieces
  • 2 ears fresh corn, cut into 4 pieces each
  • 8 oz red potatoes, cut into large bite-size pieces
  • 1 green pepper, cut into bite-size pieces
  • cajun seasoning
  • olive oil spray
  • salt
  • 8 skewers
Instructions
  1. Bring a large pot of water to a boil - add a generous pinch of salt. Drop in the potatoes and cook for 2 minutes. Add the corn pieces and cook for 5 minutes longer. Drain.
  2. Make kebabs: alternate pieces of potato, corn, pepper, and sausage on each skewer until all ingredients are used. Spray kebabs with olive oil spray and sprinkle with cajun seasoning, to taste.
  3. Place skewers on grill until the outsides are crispy and slightly charred or cooked to your preference, about 5-8 minutes.

Dipping Sauce

  • 1/2 c sour cream
  • 2 tbsp mayo
  • 1 tsp cajun seasoning
  • hot sauce, to taste
  1. Mix ingredients in a small bowl and serve with kebabs.
