Caprese Zoodles with Chicken Sausage

Ingredients
  • 2 links Gilbert’s Craft Sausages Caprese chicken sausages, sliced in ¼ in pieces
  • 1 c grape or cherry tomatoes
  • 2 large zucchini, spiralized into zucchini noodles
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ oz parmesan cheese
  • Fresh basil, roughly chopped, to garnish
  • Salt and pepper, to taste
Instructions
  1. Preheat oven to 400F.
  2. Place tomatoes onto a baking sheet and spray with some olive oil spray. Season with salt and pepper and roast in the oven for 10-12 minutes until the tomatoes begin to crack open. Remove from oven and set aside.
  3. Heat 1 tbsp olive oil in a large skillet over medium heat.  Add garlic and sausages and cook until fragrant, about 2 minutes, taking care not to burn the garlic.
  4. Add the zucchini noodles and saute for an additional 3-4 minutes, until noodles are crisp-tender. Remove from heat and add the roasted tomatoes.
  5. Season well with salt and pepper and top with the parmesan cheese and basil. Enjoy!
