Sausage and Cheese Tostadas with Tomato and Onion Salsa

Ingredients
- 1 large tomato or a couple small ones (we used 1 smaller red, and several homegrown sungolds)
- 1 green pepper
- 1 small yellow onion (divided)
- a bit of fresh cilantro (amount based on preference)
- 1 package of Andouille Chicken Sausage
- olive oil
- 1/2 tbsp Southwest Seasoning Blend (could also sub a Chili Powder here)
- 6- 8 flour tortillas
- 1/3 cup shredded cheese of choice
- 4 tbsp sour cream
- at least 1 large lime, plus more for serving, as desired
Instructions
- Preheat oven to 425 degrees. Line a baking sheet with foil/parchment paper. Set aside.
- Prep produce: dice tomato(es), slice pepper into sticks, peel onion then slice in half: cut half into thin slices, dice the remainder. Chop cilantro and cut lime in half. Set aside.
- Make salsa by combining tomatoes, diced onions, cilantro and the juice from one of your lime halves. Mix to combine. Set aside.
- Then, combine sour cream with juice from second lime half. Mix to combine. Set aside.
- Next cook up sausage: cut links into coins, then sauté over medium heat with a drizzle of olive oil for approx. 3 min. Add in your green pepper and remaining (sliced) onion. Continue cooking, stirring to combine. Sprinkle with a bit of seasoning, and continue to cook a bit more until lightly browned. Remove from heat and set aside.
- While sausage cooks up, brush tortillas with a small amount of olive oil on both sides. Arrange on baking sheet, pricking with a fork about 5 times each. Bake for a couple of min., until lightly browned, then flip and repeat. Remove once golden.
- Sprinkle each tortilla with a bit of cheese. Return to oven for another min. or so until cheese starts to melt.
- Remove cheesy tortillas from oven, plate and top with sausage-pepper-onion mixture, tomato salsa and lime sour cream as desired.
- Serve with additional lime wedges and seasoning for topping/garnish as desired.
