Caprese Zoodles with Chicken Sausage

Ingredients
- 2 links Gilbert’s Craft Sausages Caprese chicken sausages, sliced in ¼ in pieces
- 1 c grape or cherry tomatoes
- 2 large zucchini, spiralized into zucchini noodles
- 2 cloves garlic, minced
- 1 tbsp olive oil
- ½ oz parmesan cheese
- Fresh basil, roughly chopped, to garnish
- Salt and pepper, to taste
Instructions
- Preheat oven to 400F.
- Place tomatoes onto a baking sheet and spray with some olive oil spray. Season with salt and pepper and roast in the oven for 10-12 minutes until the tomatoes begin to crack open. Remove from oven and set aside.
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic and sausages and cook until fragrant, about 2 minutes, taking care not to burn the garlic.
- Add the zucchini noodles and saute for an additional 3-4 minutes, until noodles are crisp-tender. Remove from heat and add the roasted tomatoes.
- Season well with salt and pepper and top with the parmesan cheese and basil. Enjoy!
