15 Bean Soup
Recipe by Rachel’s Healthy Plate
Ingredients
- 4 Gilbert’s Craft Sausages Bourbon Apple Chicken Sausages, diced into small pieces
- 1 bag (20oz) 15 bean soup mix (discard seasoning packet)
- 1 c diced onion
- ½ c diced celery
- ½ c diced carrots
- 1 bay leaf
- 1 garlic clove, minced
- 4 c chicken broth
- 4 c water
- 1 can (15oz) diced tomatoes
- 1 tsp chili powder
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- Rinse beans. Add the beans, broth, water, sausage, onion, carrots, celery, garlic, and bay leaf into a slow cooker. Cook on high for 5 hours, until beans are tender.
- Add in the tomatoes, chili powder, and lemon juice. Cook an additional 30 min - 1 hour. Season well with salt and pepper, to taste. Serve with cornbread or crackers - enjoy!
