Caprese Chicken Sausage Pasta

This hearty-yet-light pasta dish brings together the freshest flavors of summer into one bowl

Ingredients
  • 1 lb Penne pasta
  • 4 Gilbert’s Caprese Chicken Sausages
  • 5-6 leaves Fresh basil
  • 10-15 small Cherry and/or grape tomatoes
  • 1/4 cup Pine nuts
  • 1/2 cup Pesto pasta sauce
  • 1 large ball Fresh mozzarella
  • Black pepper, cracked, to taste
  • 1 tablespoon Olive oil
Instructions
  • Boil pasta according to instructions.
  • Lightly toast pine nuts in sauté pan over medium heat until golden brown (~5 minutes). Set aside in bowl.
  • Slice grape/cherry tomatoes in half, and sauté over medium-high heat with 1 tbsp olive oil.
  • Slice sausages on the bias (diagonally) and sauté to desired doneness.
  • Chop basil into ribbons.
  • Slice mozzarella.
  • Drain pasta and place into large serving bowl or back in the pot.
  • Add pre-made pesto sauce (or make your own if you’re feeling ambitious and have a food processor!), tomatoes, sausage, and mozzarella. Toss pasta until ingredients are evenly distributed.
  • Top with cracked black pepper, pine nuts, and fresh basil ribbons.
