Recipe by Lunches + Littles
Ingredients
- 12 oz. penne pasta
- a small bunch of asparagus (trimmed/cut into smaller pieces)
- a few drizzles of olive oil
- 3- 4 cloves garlic
- 1 package of Gilbert's Craft Sausages
- a few large handfuls of cherry or grape tomatoes
- 4 tbsp butter (divided)
- 1/4 cup parmesan cheese (plus more for topping as desired), and seasonings as desired.
Instructions
- In a large pot, cook penne as directed on package, adding asparagus during the last 3 minutes of cooking time. Drain and set aside.
- Meanwhile, in a large skillet, heat a bit of olive oil over medium heat. Add garlic and cook until fragrant, being careful not to burn.
- Next add in sausage. Cook/brown for a few minutes.
- Then, add in tomatoes and 2 tbsp butter. Allow tomatoes to start to blister, as you continuously stir everything to meld flavors together (garlic, sausage, tomatoes) in the butter, etc.
- Now add in your cooked penne and asparagus. Carefully stir to combine.
- Add an additional 2 tbsp butter to pan and a few splashes of water as needed. Cook everything for a few minutes until butter, browned bits in pan and tomatoes create a bit of a sauce and pasta begins to look creamy, as shown.
- Finish by adding parmesan cheese to skillet, as well as seasonings as desired (we used Italian seasoning and some finely chopped fresh parsley).
- Once plated, top with additional parmesan as desired, serve immediately and enjoy!
