DIY Mustard
Making your own mustard is surprisingly easy and allows you to experiment with new flavors. A great idea for a bbq or special event - for best results make ahead 4-5 days.
Ingredients
Prairie-Style Yellow Mustard
- 6 tbsp Mustard seed (dried, whole)
- 2/3 cup Mild/Pale Ale or beer of your choice (we used Two Brothers Prairie Path)
- 3 tbsp Apple cider vinegar
- 1/2 cup Mustard flour
- 2 tsp Sea salt
- 1 tsp Turmeric (optional - adds a nice yellow color and a more complex flavor)
- 1/4 cup Diced fresh herbs (ie dill, thyme – optional)
Caraway Ale Mustard
- 1/3 cup Mustard seed (dried, whole)
- 2/3 cup Bitter Ale or beer of your choice (we used Goose Island Honkers Ale)
- 1/3 cup Apple cider vinegar
- 3/4 tbsp Mustard flour
- 1/3 tsp Sea salt
- 3/4 tbsp Toasted caraway seeds (toast in a sautee pan over medium heat)
- 1/4 cup Onion (diced, fresh)
Instructions
- Combine whole mustard seed, beer and vinegar in a mason jar or non-reactive container. The temperature of the beer and vinegar will have an effect on the finished product. Cold liquid = spicier mustard.
- Leave to soak on the counter for 36-48 hours.
- Sautee diced onion (for yellow mustard).
- Combine all ingredients in a blender, blend to desired consistency.
- Return to mason jar, keep refrigerated.
- Let your mustard sit for another 2-3 days after blending to mellow out.
- Serve and enjoy!
