Kale & Chicken Sausage Power Bowl

Ingredients
  • 1/4 cup quinoa, dry
  • 2 cups baby kale, washed and dried
  • 1 tsp olive oil
  • Dash of salt
  • 1 Gilbert’s Kale Chicken Craft sausage, sliced
  • 1/4 avocado
  • 1/4 cucumber, sliced into strips
  • 1 tbsp hummus
  • 1/4 tsp chia seeds
  • 1/4 tsp flax seeds
  • 1 lemon wedge

Instructions

Serves 1. Cook & Assembly Time: 15 Minutes

  1. Cook quinoa according to package directions.
  2. While quinoa is cooking, massage kale with olive oil and salt. Place into a small-medium sized bowl.
  3. On top of the massaged kale, arrange sausage, avocado, cucumber, and hummus.
  4. Sprinkle the entire bowl with chia and flax seeds.
  5. Finish the bowl with juice from the lemon wedge.
  6. Enjoy!
