Kale & Chicken Sausage Power Bowl

Ingredients
- 1/4 cup quinoa, dry
- 2 cups baby kale, washed and dried
- 1 tsp olive oil
- Dash of salt
- 1 Gilbert’s Kale Chicken Craft sausage, sliced
- 1/4 avocado
- 1/4 cucumber, sliced into strips
- 1 tbsp hummus
- 1/4 tsp chia seeds
- 1/4 tsp flax seeds
- 1 lemon wedge
Nutrition Information Per Bowl: 525 calories, 23.5g fat, 55.1g carbohydrate 30g protein
Instructions
Serves 1. Cook & Assembly Time: 15 Minutes
- Cook quinoa according to package directions.
- While quinoa is cooking, massage kale with olive oil and salt. Place into a small-medium sized bowl.
- On top of the massaged kale, arrange sausage, avocado, cucumber, and hummus.
- Sprinkle the entire bowl with chia and flax seeds.
- Finish the bowl with juice from the lemon wedge.
