One-Pan Caprese Sausage Pasta

Simple and satisfying. A perfect weeknight meal.

Ingredients
  • 4 links (1 package) Caprese Chicken Sausage (coined)
  • A few drizzles of olive oil
  • 1 tbsp butter
  • 1/2 cup diced onion
  • 3 cloves garlic (minced)
  • 3 to 3 and 1/2 cups water*
  • 2 and 1/2 cups medium shells
  • a few handfuls of spinach
  • 1 pint cherry tomatoes
  • salt and pepper to taste
Instructions
  1. Over medium high heat, drizzle a bit of olive oil in a larger sized skillet or frying pan with higher sides.
  2. Add coined sausage to skillet and sauté for a couple minutes; flipping/moving around pan as you go.
  3. Next, add butter, garlic and onion to pan, stirring to combine as you go. Once fragrant and onion tender- proceed to next step.
  4. To skillet add 3 cups water (may need more, but start with 3 cups), pasta shells, spinach and tomatoes. Bring to a boil (still over medium-high heat), tossing often.
  5. Once boiling, continue to toss- cooking until the liquid starts to reduce and thickens to a sauce. Cook approx. 10 minutes until pasta is cooked al dente.
  6. Once pasta is done/cooked, add cheese, and season to taste (feel free to add additional seasonings as desired).
  7. Voila! Serve immediately and enjoy!
