Pomegranate, Pear & Kale Salad

Classy enough for any party, easy enough for any lunch

Ingredients

  • 2 cups chopped kale
  • ½ pear, sliced
  • 1 Gilbert’s Chicken Bratwurst, sliced
  • 2 tbsp feta cheese
  • 2 tbsp pomegranate arils
  • 1 tbsp candied walnuts
  • ¼ cup balsamic vinegar

Instructions

  1. On a large plate top kale with pear, sausage, feta, pomegranate arils and walnuts.
  2. To make your reduction, in a small saucepan simmer balsamic vinegar for ~2 minutes until reduced ~½ in volume.
  3. Drizzle balsamic reduction onto salad and enjoy!

*To make candied walnuts heat ~¼ cup walnuts and 1-2 tbsp brown sugar in a saucepan until brown sugar is melted. Shake the saucepan to coat walnuts.
