Sausage, Onion & Roasted Grapes Sheet Pan

With just 3 ingredients plus herbs and spices, this sheetpan meal is surprisingly decadent.

Ingredients
  • 1 package Gilbert’s Sweet Pepper & Onion Chicken Sausages (4 links)
  • 1 yellow onion (thinly sliced)
  • a few big groupings of red grapes (approx 3 cups)
  • olive oil
  • Italian seasoning
  • fresh thyme
  • salt and pepper to taste
Instructions
  1. Line a baking sheet with parchment paper and preheat oven to 375 degrees.
  2. Place grapes and onions on pan, drizzle with oil and season generously with Italian seasoning, salt and pepper. Toss/rub to coat.
  3. Add sausage links and ensure they too get coated with oil.
  4. Try to arrange everything so it is in a single layer and not overtop something else. Then add a bit if fresh thyme leaves, or full sprigs if desired.
  5. Bake for approximately 30 minutes flipping sausages once when halfway through time.
  6. And, that’s it! Remove pan from oven once sausages are cooked through, and grapes and onions are roasted/caramelized. Plate, and enjoy!
