Sheet Pan Chicken Sausages & Veggies

Ingredients
- 3/4 cup small potatoes
- 1 pack (4 links) of Gilbert’s Sausages (we used Fig & Feta here, cut in thirds)
- 3 carrots (peeled and sliced up)
- 1/2 a yellow onion (sliced)
- 4 garlic cloves (minced)
- 1- 2 cups each: broccoli and cauliflower, a couple small beets (peeled and cut in halves or fourths)
- 1- 2 tbsp Everything But The Bagel seasoning
- You will also need a few drizzles of olive oil, and salt and pepper to taste.
Instructions
- Preheat oven to 415 degrees and line baking sheet with parchment paper, or alternatively use a non-stick cooking spray.
- Parboil potatoes on the stovetop. Then remove from heat and set aside.
- Meanwhile, add all prepped veggies to a large mixing bowl.
- Add 1 tbsp (more or less as desired) of Everything But The Bagel seasoning, and a few drizzles of olive oil to the bowl. Stir gently to coat.
- Dump veggies out onto prepared baking sheet and season with salt and pepper, as desired.
- Bake for 10 min. Then carefully remove from oven and nestle in the chicken sausage pieces.
- Bake for an additional 12- 15 min.
- Once done, sprinkle with additional seasoning as desired and serve/enjoy immediately.
