Recipe by Rachel’s Healthy Plate
Ingredients
- 4 Gilbert’s Sweet Pepper & Onion Chicken Sausages, sliced into 1/4 inch pieces
- 4 c. low sodium chicken broth
- 3 (15oz) cans cannellini beans, drained and rinsed
- 1 (7oz) can diced green chilies
- 1 c. diced onion
- 1 clove minced garlic
- 1 tbsp olive oil
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp pepper
- pinch of salt
Instructions
- Blend 1 1/2 cups of cannellini beans with about 1 cup of chicken broth. Set aside. (If you don't have a blender or food processor you can use a potato masher or fork to mash the beans and then stir in the broth).
- In a large pot heat olive oil over medium heat. Add diced onions and saute until softened, about 4-5 minutes.
- Add sausage to the pan and cook about 2-3 minutes, until the edges begin to brown. Add garlic and saute for 1 minute.
- Add the remaining ingredients, including the mashed beans, and bring to a boil. Reduce heat to a simmer and cook uncovered 15-20 minutes. Enjoy!
