15 Bean Soup

Ingredients

  • 4 Gilbert’s Craft Sausages Bourbon Apple Chicken Sausages, diced into small pieces
  • 1 bag (20oz) 15 bean soup mix (discard seasoning packet)
  • 1 c diced onion
  • ½ c diced celery
  • ½ c diced carrots
  • 1 bay leaf
  • 1 garlic clove, minced
  • 4 c chicken broth
  • 4 c water
  • 1 can (15oz) diced tomatoes
  • 1 tsp chili powder
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Rinse beans. Add the beans, broth, water, sausage, onion, carrots, celery, garlic, and bay leaf into a slow cooker. Cook on high for 5 hours, until beans are tender.
  2. Add in the tomatoes, chili powder, and lemon juice. Cook an additional 30 min – 1 hour. Season well with salt and pepper, to taste. Serve with cornbread or crackers – enjoy!
