Cajun Chicken Sausage Kebabs
One of our favorite ways to enjoy Gilbert’s Andouille Chicken Sausage. Easy, cheap and fun for the whole family. Serves 4.
Ingredients
- 4 Gilbert’s Andouille Chicken Sausages, cut into large pieces
- 2 ears fresh corn, cut into 4 pieces each
- 8 oz red potatoes, cut into large bite-size pieces
- 1 green pepper, cut into bite-size pieces
- cajun seasoning
- olive oil spray
- salt
- 8 skewers
Instructions
- Bring a large pot of water to a boil – add a generous pinch of salt. Drop in the potatoes and cook for 2 minutes. Add the corn pieces and cook for 5 minutes longer. Drain.
- Make kebabs: alternate pieces of potato, corn, pepper, and sausage on each skewer until all ingredients are used. Spray kebabs with olive oil spray and sprinkle with cajun seasoning, to taste.
- Place skewers on grill until the outsides are crispy and slightly charred or cooked to your preference, about 5-8 minutes.

Dipping Sauce
- 1/2 c sour cream
- 2 tbsp mayo
- 1 tsp cajun seasoning
- hot sauce, to taste
- Mix ingredients in a small bowl and serve with kebabs.
