Caprese Sausage with Pesto Roasted Vegetables

Ingredients

  • 4 Gilbert’s Caprese Chicken Sausages, sliced
  • 1 bell pepper, any color, diced
  • 1 small zucchini, cut in half and then sliced into ½ inch thick pieces
  • ½ small red onion, diced
  • 2 small red potatoes, diced
  • 2 cup broccoli florets, cut into small pieces
  • ¼ cup pesto

Instructions

  1. Preheat oven to 400F. Place all vegetables on a large baking tray and toss with the ¼ cup pesto until well coated. Bake for 15 minutes.
  2. Remove tray from oven and flip vegetables. Add the sliced sausage and cook for another 10-15 minutes or until vegetables are cooked through and roasted to your desired doneness. Can be served as is or with your favorite grain. Enjoy!
