Gouda Chicken Broccoli Salad

A hearty make-ahead salad for your work week. Makes 6-8 servings.

Ingredients

  • 1 head of broccoli, chopped
  • ½ red onion, copped
  • 1 package Gilbert’s Gouda Chicken Sausage, sliced
  • ¼ cup raisins
  • ¼ cup sunflower seeds
  • 3 slices bacon, crumbled
  • ⅓ cup plain greek yogurt
  • 1 tbsp vinegar
  • 2 tsp honey
  • Dash of S&P

Instructions

  1. Combine broccoli, onion, sausage, raisins, sunflower seeds, and bacon in a large bowl.
  2. In a small bowl or cup whisk together yogurt, vinegar, honey, and S&P.
  3. Pour yogurt mixture over broccoli mix, coating well.
  4. Let salad sit in the fridge for 2+ hours, ideally overnight.
  5. Serve cold.
