Slow Cooker Red Beans & Rice

Easy, healthy comfort food for your crockpot or Instant Pot.

Ingredients

  • 4 Gilbert’s Andouille Chicken Sausages, sliced into 1/4 inch pieces
  • 1 lb dried red beans or kidney beans, rinsed
  • 6 c low sodium chicken broth
  • 3 stalks celery, diced
  • 1 medium onion, diced
  • 1 green pepper, diced
  • 4 cloves garlic, minced
  • 1 jalapeño, seeds removed, minced
  • 2 tsp creole seasoning blend
  • 1 bay leaf
  • 2 tsp Worcestershire
  • salt/pepper, to taste

Instructions

  1. Add all ingredients into a crockpot (minus salt) and cook on high heat for 6 hours or until beans are cooked through.
  2. Adjust salt/pepper to taste. (Mine didn’t need any salt b/c of the amount of salt in the creole seasoning and broth – this will vary depending on what you use!)
  3. Serve over cooked rice. Top with green onion and hot sauce. Enjoy!
