White Bean & Sausage Chili

A low-fat / high-fiber comfort staple for cold weather.

Ingredients

  • 4 Gilbert’s Sweet Pepper & Onion Chicken Sausages, sliced into 1/4 inch pieces
  • 4 c. low sodium chicken broth
  • 3 (15oz) cans cannellini beans, drained and rinsed
  • 1 (7oz) can diced green chilies
  • 1 c. diced onion
  • 1 clove minced garlic
  • 1 tbsp olive oil
  • 1 1/2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp pepper
  • pinch of salt

Instructions

  1. Blend 1 1/2 cups of cannellini beans with about 1 cup of chicken broth. Set aside. (If you don’t have a blender or food processor you can use a potato masher or fork to mash the beans and then stir in the broth).
  2. In a large pot heat olive oil over medium heat. Add diced onions and saute until softened, about 4-5 minutes.
  3. Add sausage to the pan and cook about 2-3 minutes, until the edges begin to brown. Add garlic and saute for 1 minute.
  4. Add the remaining ingredients, including the mashed beans, and bring to a boil. Reduce heat to a simmer and cook uncovered 15-20 minutes. Enjoy!

Serving suggestions: sour cream, cilantro, lime wedge, sliced avocado, tortilla chips, cornbread.
