Sweet Chicken Sausage Breakfast Bake
A perfect dish for breakfast or brunch. Make your job easy by roasting sweet potatoes the night before!

Ingredients
- 3 Gilbert's Aloha Chicken Sausages, coined
- 2 cups pre-roasted sweet potatoes
- 1 cup cheese, divided (photo shows 1/2 cup cheddar and 1/2 cup mozzarella)
- 8 eggs
- 3/4 cup milk
- 1 tsp olive oil
- 1/2 cup diced onion
- 1 cup diced peppers
- 1/2 cup small/grape tomatoes (halved)
- fresh parsley (chopped), for garnish
Instructions
- Preheat oven to 400 degrees
- Layer pre-roasted sweet potatoes and sausage coins in a dish
- Top with half of cheese. Set aside.
- In a large bowl whisk together eggs, milk and oil.
- Add onion. Gently mix to combine.
- Pour egg mixture over cheese.
- Top with peppers, tomatoes and anything else you'd like to add.
- Top with remaining cheese.
- Bake approx. 30 minutes or until puffed and lightly browned.
- Garnish with chopped parsley, if desired. Serve immediately, sprinkling with salt/pepper as needed.
