Sweet Cajun Sausage and Potatoes

Introduce your kids to new flavors they'll love with this one-pot meal for the whole family.

Ingredients
  • Olive oil
  • 2 and 1/2 lbs potatoes – I mixed red and yellow ones (halved/quartered)
  • 1/2 tbsp Cajun Seasoning (more or less to taste)
  • 2 medium-sized leeks (thinly sliced)*
  • 5 cloves garlic (minced)
  • 1 tbsp fresh thyme leaves
  • 10-15 oz smoked andouille sausage – I used 6 links of Gilbert’s Smoked Andouille Chicken Sausage
  • 1/4 cup pure honey
  • 1 tbsp apple cider vinegar
  • salt and pepper to taste
  • a handful of fresh chopped green onions for garnish*
  • you can use leeks or green onions or a combination of both.

Serves 5-6.

Instructions
  1. In a large pot or pan over medium heat, add a few drizzles of olive oil. Then add halved/quartered potatoes to the pan and sprinkle with about half of the Cajun seasoning. Season with salt and pepper to taste and then allow potatoes to start to cook.
  2. Cook potatoes 5- 7 minutes until lightly browned before you start moving them around in the pan. You don’t want your potatoes to break up, but you do want to get this cooking. Cook potatoes a total of 12 min. or so before next step.
  3. Next, add in sliced leeks, garlic and thyme. Sprinkle with the remaining Cajun seasoning and move everything around in pan to coat. Cook for 5 minutes, or until leeks begin to soften.
  4. While the above cooks, slice your sausage into small coins (1/4 in thick or so). Then add to pan mixing a bit to incorporate.
  5. Cover and cook for 12- 15 minutes, until potatoes are fork tender and sausage is nicely browned.
  6. Once time is always up, combine honey and vinegar in a small dish. Then pour over the contents of pan and stir/mix to combine.
  7. Once combined, remove pan from heat. Adjust seasoning as you see fit, season with additional salt and pepper as desired and then garnish with chopped green onions.
  8. Serve immediately as is, or top over a bed of rice. Enjoy!
