Sweet Chicken Sausage Breakfast Bake

A perfect dish for breakfast or brunch. Make your job easy by roasting sweet potatoes the night before!

Ingredients
  • 3 Gilbert's Aloha Chicken Sausages, coined
  • 2 cups pre-roasted sweet potatoes
  • 1 cup cheese, divided (photo shows 1/2 cup cheddar and 1/2 cup mozzarella)
  • 8 eggs
  • 3/4 cup milk
  • 1 tsp olive oil
  • 1/2 cup diced onion
  • 1 cup diced peppers
  • 1/2 cup small/grape tomatoes (halved)
  • fresh parsley (chopped), for garnish
Instructions
  • Preheat oven to 400 degrees
  • Layer pre-roasted sweet potatoes and sausage coins in a dish
  • Top with half of cheese. Set aside.
  • In a large bowl whisk together eggs, milk and oil.
  • Add onion. Gently mix to combine.
  • Pour egg mixture over cheese.
  • Top with peppers, tomatoes and anything else you'd like to add.
  • Top with remaining cheese.
  • Bake approx. 30 minutes or until puffed and lightly browned.
  • Garnish with chopped parsley, if desired. Serve immediately, sprinkling with salt/pepper as needed.
