Sweet Chicken Sausage Breakfast Bake

A perfect dish for breakfast or brunch. Make your job easy by roasting sweet potatoes the night before!

Ingredients

  • 3 Gilbert’s Aloha Chicken Sausages, coined
  • 2 cups pre-roasted sweet potatoes
  • 1 cup cheese, divided (photo shows 1/2 cup cheddar and 1/2 cup mozzarella)
  • 8 eggs
  • 3/4 cup milk
  • 1 tsp olive oil
  • 1/2 cup diced onion
  • 1 cup diced peppers
  • 1/2 cup small/grape tomatoes (halved)
  • fresh parsley (chopped), for garnish

Instructions

  1. Preheat oven to 400 degrees
  2. Layer pre-roasted sweet potatoes and sausage coins in a dish
  3. Top with half of cheese. Set aside.
  4. In a large bowl whisk together eggs, milk and oil.
  5. Add onion. Gently mix to combine.
  6. Pour egg mixture over cheese.
  7. Top with peppers, tomatoes and anything else you’d like to add.
  8. Top with remaining cheese.
  9. Bake approx. 30 minutes or until puffed and lightly browned.
  10. Garnish with chopped parsley, if desired. Serve immediately, sprinkling with salt/pepper as needed.
